This knife is produced by Hatsukokoro. It has a three-layer composite steel structure, with a stainless steel outer layer and a silver three-steel blade. The hardness is HRC61±1. The entire knife has good rust resistance, making it very suitable for household use. The blade surface is polished with a mottled pattern, giving it the appearance of a thin layer of frost on the blade. Therefore, it is named "Ginsou" (Silver Frost). The blade has a moderate V-shaped edge, and if you need to handle tougher tasks like cutting chicken or fish bones, you can increase the sharpening angle of the edge to achieve the desired result.
