This knife is a sujihiki knife. It is crafted by Yu Kurosaki, a traditional craftsman from Echizen, Japan, and named "SENKO-EI."
The blade has a three-layer construction, with the outer layer made of stainless steel. It is hand-hammered to create a beautiful hammered texture and meticulously polished to a sparkling finish under light. The core steel is SG2/R2 powdered steel, a special steel produced by Hitachi Metals in Japan, with a hardness of 63±1. It offers excellent edge retention and cutting performance.

Important notes:
The blade is relatively thin and not suitable for cutting frozen meat or bones.
High-carbon stainless steel may still develop some surface rust when exposed to moisture for extended periods. It is recommended to dry the knife promptly after use and keep it in a dry state.
