This petty knife is produced by Hatsukokoro.
Specifications:
Construction: Three-layer composite steel, with a stainless steel outer layer and a core steel of Gin-san steel, with a hardness of HRC 61±1. The knife boasts excellent rust resistance, making it ideal for home use. The blade is finished with a frosted polish, giving it the appearance of a thin layer of frost on the blade, hence named "Ginsou." The V-edge of the blade is moderate, but if you need to handle slightly heavier tasks (like dealing with chicken or fish bones), you can increase the edge angle to achieve your desired outcome.
