This Gyuto knife from Sakai Takayuki in Sakai City, Japan, features VG10 stainless steel as the core steel, with multiple layers of low-hardness stainless steel on the surface, folded and forged to create a Damascus pattern. This construction provides excellent rust resistance and ease of sharpening. The blade is hammered to reduce sticking when cutting ingredients. The handle is made of synthetic wood, offering an elegant feel.
